Blackberry Gin Spritzer

From Spices in my DNA and tweaked a bit

ingredients

For the cocktail

* 2-4 blackberries + a couple  for garnish

* a few mint leaves + a couple for garnish

* 1 1/2 oz. Flapper Gin

* 1/2 oz.  blackberry simple syrup

* bubble water 

* spiralized or sliced cucumbers for garnish

* Ice

For the blackberry simple syrup

* 1 cup blackberries

* 1 cup sugar

* 1 cup water

instructions

1. Make the simple syrup. Combine the blackberries, sugar, and water in a medium saucepan and bring to a boil. Boil for 2 minutes and then remove from heat and let cool (*you can reduce this recipe by half or even a quarter as it makes quite a bit of syrup)

2. To make the cocktail, add blackberries and a couple of mint leaves to a rocks glass and muddle until they have released their juices. Add the ice, gin, & simple syrup. Top off with the bubble water. Garnish with spiralized cucumbers, blackberries, and mint leaves
